Ingredients
2 cups oat bran
1/3 cup Oat flour
1/2 tsp. each: baking soda, salt, and ground cinnamon
1/4 tsp. baking powder and allspice
1 1/4 cup skim milk
5 oz. apple preserves or applesauce
2 egg whites lightly beaten
3/4 cups raisins
Directions
Combine all dry ingredients in a large bowl. Whisk all liquid ingredients and preserves in a small bowl. Pour liquid ingredients over the dry mixture and stir well with a spatula and fold in the raisins. Purely optional, add a few packets of table-top Splenda for extra sweetness. Fill 14 lined muffin holes in a tin. Bake at 350 for 22 minutes or until brown.
The applesauce is the secret ingredient to make those muffins moist.
