Chicken & Chickpeas

Chicken & Chickpeas - one dish meal

Ingredients
1 pound skinless/lean chicken breast tenders
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 tablespoon olive oil
1 cup sliced red onion
1 cup green bell pepper strips
1 jalapeno deseeded and membrane removed
1/2 teaspoon of cayene (optional)
1 large clove of garlic roughly minced
1 (15 1/2-ounce) can chickpeas, drained
1 cup of store bought tomato sauce with garlic & basil
Fresh flat-leaf parsley leaves

Should yield 4 sevings.

Instructions
Sprinkle chicken with salt & pepper.
Heat oil in a large nonstick skillet over medium-high heat.
Add chicken to pan; cook 2 to 3 minutes on each side.
Add onion and bell pepper; sauté 4 minutes. Reduce heat to medium.
Add garlic, chickpeas, tomatoes sauce, jalapeno & cayene; cover & cook for about 8 minutes.
Garnish with fresh parsley leaves.
