Mashed Turnips

Mashed Turnips

Ingredients

1 1/2 lb turnip
2 medium size plum tomatoes (de-seeded & chopped)
1 jalapeno (de-seeded, membranes removed & chopped)
1/2 teaspoon of garlic powder
1/2 teaspoon of cayenne (use paprika if you can't take heat)
1/2 tablespoon of dried cilantro
1 medium size onion thinly sliced
1 tablespoon of extra virgin olive oil

Instructions

Peal & cut turnips into 1 inch cubes and boil in water until tender
With a fork mash the turnips wells & set aside
Saute onions in oil in a frying pan & add this mixture to mashed turnips
Add rest of the ingredients to mashed turnips & mix well
Season with salt and freshly ground pepper to suit your taste

Serve hot as a great healthy side dish with grilled lamb chops or chicken breast. Should yield about 4 servings.
