Egg White Omellete

Egg White Omellete - fat free and loaded with protein

Ingredients

1 cup of Better'n Eggs (or 4 egg whites)
1 sliced scallion
1 small tomato cut into small pieces
1 chopped jalapeno
1/2 teaspoon of dry cilantro
1/4 teaspoon paprika
A pinch of salt to suit you taste

Instructions

Coat a microwave-safe bowl with a cooking spray
Place all the ingredients in the bowl & mix well
Microwave for 3 minutes on high. At this point only part of the egg mixture will be set
Smash the set egg into small pieces & mix with unset egg
Microwave for an additional 2 minutes on high (adjust timing according to power of m/w)

Purely optional, you can incorporate other ingredients in the omelette, such as chopped button mushrooms, bell peppers, green peas, etc.. Enjoy your fat-free omelette while it is hot with a slice of whole grain brown bread or a brown pita nann.
