Egg & Pea Curry
Ingredients
4 large eggs
1 small onion finely diced
2 garlic cloves finely minced
1 inch crushed fresh ginger
1/2 tsp fenugreek
1/2 tsp yellow mustard seeds
1 tbs olive oil
2 tbs store bought low fat tikka sauce
1 cup water
1/2 tsp cayenne
1 tbs dried fenugreek leaves
15 oz frozen green peas
1 tsp dried cilantro
1/2 tsp garam masala
Salt to taste
Ingredients

1 cup water
1/2 tsp cayenne
1 tbs dried fenugreek leaves
15 oz frozen green peas
1 tsp dried cilantro
1/2 tsp garam masala
Salt to taste
Instructions
Prepare 4 hard boiled eggs and slice each into two halves and set aside
Sauté onion, garlic, ginger, fenugreek and mustard seeds in oil in a pan
Add tikka sauce and water and fenugreek leaves to the pan and cook for a few minute on low heat
Pour green peas into the pan and cook for a few minutes until peas are done.
Season this dish with salt to taste and then turn off the heat.
Combine the hard boiled eggs with the pea curry mixture and sprinkle garam masala on top
Garnish with dried cilantro
Should yield two generous servings. Enjoy over plain brown rice.
