Split Chickpeas Curry

Split Chickpeas -rich in protein, fiber and complex carbohydrate & low in fat!

Ingredients

1 cup of dry split chickpeas
6 cups of water
1/2 of medium size onion finely diced
1 tbs of fresh Ginger finely chopped
1 tsp of nigella seeds
1/2 tsp of cayenne
1/2 tsp tumeric
1/2 tsp salt
1 large jalapeño finely chopped
1/2 of medium size onion finely sliced
1 tbs virgin olive oil
1 tsp cumin seeds
1/4 tsp garam masala
1 tsp dry mint

Instructions

Start by rinsing the split chickpeas several times and then place in a sauce pan
Add 6 six cups of water to the pan together with finely diced onions, ginger, nigella seeds, cayenne, tumeric and salt
Cook on low medium heat for about 60 minutes until the split chickpeas are soft and well done
Add chopped jalapeno to the pan for heat and color
In a frying pan saute finely sliced onions and cumin seeds in oil and then pour this mixture over the cooked split chickpeas
Sprinkle garam masala and mint over the dish.

Should yield four servings. Enjoy with whole grain bread or brown rice.
