Mashed Butternut Squash

Recipe

1 medium size butternut squash (2 ½ lb)
1 tbs olive oil
1 tsp crushed garlic
½ tsp cumin seeds
½ tsp red chilly flakes
1 tbs lemon juice
½ tbs dried cilantro
Salt to taste

Instructions
Peel the butternut squash and cut into small dices and boil in large pot until soft
Mash the butternut squash with a potatoe masher
In a frying pan saute garlic and cumin seeds and red chilly flakes in oil and tip this mixture in the mashed butternut squash
Squirt lemon juice and season with salt to taste
Garnish with cilantro
Should yield 5 generous servings. A great alternative to mashed potatoes.
