Spicy Cauliflower

Spicy Cauliflower - a healthy vegetarian meal

Ingredients


1 medium size cauliflower cut into individual florets
1 medium size red onion
1 tablespoon of finely minced fresh ginger
1 ½ teaspoon of finely minced garlic
1 tablespoon of extra virgin olive oil
1 teaspoon of ground coriander
½ teaspoon of tumeric
½ teaspoon of cayenne pepper
¼ teaspoon of salt
3 Roman tomatoes roughly chopped
½ Cup of diced red bell peppers
1 Jalapeno pepper deseeded and finely chopped
¼ teaspoon of Garam Masala (or use ground black pepper)
1 tablespoon of roughly chopped fresh cilantro

Instructions

Heat oil in a large pan and saute onions, garlic and ginger
Mix in a small bowl salt, ground coriander, tumeric and cayenne and turn this into a blend with a tablespoon of water
Add the spice blend to the pan and cook with the onions for a couple of minutes
Add the cauliflower florets, tomatoes, bell peppers and jalapeno to the pan
Mix all ingredients well and cover the pan with a lid and cook on medium low heat for about 20 minutes
Adjust salt to taste and sprinkle garam masala or freshly ground black pepper
Garnish with fresh cilantro

Perfect vegetarian meal to serve with brown rice.
