Eggplant with Bell Peppers
Eggplant with Bell Peppers - a healthy side dish
Ingredients
1 Medium size eggplant chopped into 1-inch dices
¾ Cup each of chopped green, red and yellow bell peppers
1 Medium size red onion thinly sliced
2 Cloves of garlic finely minced
1 tablespoon of extra virgin olive oil
2 tablespoons of store bought garlic flavored tomato sauce
1 Large deseeded chopped jalapeno
½ teaspoon each of ground coriander and tumeric
¼ teaspoon of cayenne pepper
Juice of one fresh lemon
1 tablespoon of roughly chopped fresh cilantro

Instructions
Heat the oil in a large pan and saute the onions and garlic
Add the tomato sauce to the onion and garlic mixture and stir for a minute
Combine the eggplants and bell peppers and place them in the pan
Add all remaining ingredients barring cilantro and cover the pan with a lid
Cook on medium low heat for about 20 minutes
Season with salt to taste and garnish with chopped cilantro
Perfect side dish to serve with grilled fish or chicken

oohh this looks really good im going to try it --last night for dinner my daughter in law made a fish called "swai" which neither of us had ever heard of. your dish would have been the perfect accompaniment
