Tropical Shrimp Scampi with Mango
Start with half a pound of cooked shrimps and one medium size riped mango, peeled and cut into cubes. Saute one small onion with finely chopped garlic in two teaspoons of olive oil. Place the shrimps and mango cubes in the onion/garlic mixture and add two chopped tomatoes, one large green chilly and squirt of lemon juice. Season with salt and pepper and cook for three to four minutes and garnish with fresh cilantro.
