Baby Bok Choy With Sardines
Baby Bok Choy with Sardines - a speedy well balanced dinner
Rinse two cups of baby bok choy and cut each into two halves. Saute one small red onion and two cloves of garlic in two teaspoons of olive oil. Add baby bok choy to the onion/garlic mixture together with a can of sardines (drain water from the can), one finely chopped green chilly and splash of soy sauce and a squirt of lemon juice and a teaspoon of dry dill. Season with salt and freshly cracked black pepper and cook for three minutes. Serve with plain brown rice.
