Omelette With Dijon Mustard in Pita Pocket - quick recipe for brunch or lunch
Ingredients
2 large eggs
2 tsp Dijon mustard
1 tsp green chilly sauce (optional)
Salt to taste
1 tsp dried mint
1 tsp sweet & sour sauce
1 brown whole grain pita bread
Instructions
Coat a microwave save bowl with cooking spray
Break two eggs in to the bowl and add mustard, green chilly sauce and salt
Beat the egg mixture well and place in microwave on high heat for two minutes
Spread sweet & sour sauce over the omelette and sprinkle dried mint
Place the omelette inside the pocket of a warm pita bread
