Jerk Chicken
Jerk Chicken - a simple, flavorful & low-fat recipe
Ingredients
1 lb skinless, boneless chicken breast sliced in 1/2 inch cubes
1 medium size onion diced
1 tsp fresh ginger finely minced
1 tsp crushed garlic
1 tbs olive oil
1 plum tomato roughly chopped
1 tbs lemon juice
1 tsp dried cilantro
salt to taste
Instructions
Saute onion, garlic and ginger in oil in a pan
Add chicken breast to the pan with tomato and lemon juice
Cook on medium heat for about eight to ten minutes until chicken is cooked
Season with salt to taste and garnish with cilantro.
Should yield three generous servings. Serve with brown rice.
I used to like my jerk chicken with a bit of scotch bonnet pepper. It gives it the authentic heat this dish deserves!
