Cajun Catfish

Cajun Catfish - a quick and healthy source of protein and "good" fat

Ingredients

0.5 lb catfish cut into half inch pieces
1 1/2 tablespoons of Cajun seafood sauce (store bought)
1 med size red onion thinly sliced
1 large jalapeƱo pepper finely chopped and deseeded
1 tablespoon of extra virgin olive oil
1 teaspoon of dry cilantro (use fresh if you have some)

Instructions

Marinate the catfish in Cajun dressing for 30 to 60 mins.
Lightly saute the onions in oil in a saucepan
Add the catfish and jalapeno pepper to the sauted onions in the pan
Cover the pan with a lid and cook on medium heat for about 5 to 6 minutes
Garnish with cilantro and season with salt to taste.

Should yield two servings. Enjoy with plain brown rice.
