Brussels Sprouts & Green Peas

Brussels Sprouts & Green Peas - perfect side dish for a cold winters evening

Ingredients

8 medium size Brussels sprouts roughly sliced
1 15 oz can of small green peas
2 chopped scallions
1 large jalapeno pepper, de-seeded and finely chopped
8 grape tomatoes, each cut into two halves
1 teaspoon lemon juice
1 teaspoon of dry dill
2 tablespoons of fat free zesty Italian salad dressing


Instructions

Place Brussels sprouts in microwave safe bowl with 4 tablespoons of water
Microwave Brussels sprouts for 4 minutes and then drain the water
Drain the can of green peas and combine with steamed Brussels sprouts
Add all other ingredients barring the salad dressing
Pop the mixture in the microwave for about 2 minutes
Add the salad dressing and mix well
Season with coarse salt and freshly ground black pepper

This should yield 3 to 4 servings. Eat this dish warm with a piece of grilled salmon.
