Roasted Spicy Butternut Squash

Roasted Butternut Squash - a delicious spicy source of starch

Ingredients

2lb Butternut squash
1 teaspoon of cayenne pepper
1/2 teaspoon of cinnamon
2 tablespoon of sweet and sour sauce
1 tablespoon of olive oil
1 teaspoon of dry mint
1/2 teaspoon of freshly ground black pepper
Salt to taste

Instructions

Remove skin and the seeds from inner core of butternut squash
Chop butternut squash into one inch dices and place in a large bowl
Mix all the remaining ingredients with butternut squash
Coat a baking tray with a cooking spray and spread the butternut squash
Roast in a preheated oven for about 40 to 45 mins at 350 degree F.
