Potatoes & Seven Seeds



Potatoes & Seven Seeds - a flavorful vegetarians delight

Ingredients
2 lb of white potatoes peeled and cut into 1/4 inch round slices
1 tablespoon of olive oil
8 oz canned diced tomatoes
2 jalapeno peppers
1/2 teaspoon of tumeric
1/2 teaspoon of cayenne
1/2 teaspoon of salt
4 tablespoons of tap water
2 tablespoon of chopped fresh cilantro
Cocktail of seven seeds as listed below:
1/2 teaspoon of fenugreek
1/2 teaspoon cumin seeds
1/2 teaspoon of nigella seeds
1/2 teaspoon of fennel seeds
1/4 teaspoon of yellow mustard seeds
1/4 teaspoon of black mustard seeds
1/4 teaspoon of carom seeds



Instructions
Heat oil in a pan
Add the cocktail of 7 seeds to the oil
Brown the seeds for about 2 mins to infuse their flavor
Place the potatoes in the pan after the 7 seeds have browned
Add all remaining ingredients barring cilantro
Cover pan with a lid and cook on medium low heat for about 20-25 mins
Garnish with fresh cilantro
