Brussels Sprouts, Plantain and Tuna Salad - a quick and nutritionally balanced salad

Ingredients

4 large Brussels sprouts, each cut into four slices
1 ripe yellow plantain
1 5 oz can of tuna in water
1 scallion chopped into small pieces
5 grape tomatoes, each cut into two halves
1 tablespoon of fat free ranch dressing
1 teaspoon of sweet and sour sauce
1 teaspoon of papaya sauce
1 teaspoon of dry mint
Pinch of salt and freshly ground black pepper


Instructions

Place Brussels sprouts in a safe bowl with 4 tablespoons of water and cover loosely with a lid
Steam Brussels sprouts in a microwave for 3 mis and drain water and set a side
Make a long slit in the skin of the plantain without poking the flesh and microwave for 2 mins
Remove skin from the plantain and cut into quarter inch circles
Drain the can of tuna and combine it with steamed Brussels sprouts and plantain slices
Add remaining ingredients and gently mix all contents together

This is a very quick and nutritionally balanced salad, containing a source of starch, protein and green vegetable. Enjoy the salad either warm or at room temperature...
