Brussels Sprouts in Tamarind Sauce

Ingredients

15 Brussels sprouts roughly sliced
1 medium size red onion
1 garlic clove finely minced
1 tsp ginger finely chopped
1 tsp cumin seeds
1/2 tbs olive oil
1/2 tsp red chili flakes
1/2 lemon Zest and juice
2 tbs store bought tamarind sauce
Salt to taste
2 tbs chopped fresh cilantro


Instructions

Steam Brussels sprouts & set aside
Sauté onion, garlic, ginger & cumin seeds in oil in a sauce pan
Add the steamed Brussels sprouts, together with lemon zest & juice, chili flakes and tamarind sauce
Mix everything well and cook for a minute or two
Season with salt to taste and garnish with fresh cilantro

A perfect green vegetable side dish to go along with grilled fish or chicken. Recipe yields three generous servings.
