Hot Crunchy Guacamole

Ingredients
½ Red Onion
¼ Cup each of Red and Green Bell Peppers
½ Tablespoon of Extra Virgin Olive Oil
1 Ripe Avocado chopped into large chunks
1 Chopped Jalapeno (leave seeds in for extra heat)
4 Grape tomatoes each sliced into two halves
1 Medium size lemon
1 Tablespoon of roughly chopped fresh cilantro
Coarse salt and freshly ground black pepper
Instructions
Heat oil in a pan and lightly sauté onions and bell peppers
Remove from heat after a couple of minutes to retain crunch
Add all other ingredients to the onion/pepper mixture
Squirt juice of one lemon
Season with salt and pepper to taste
Garnish with cilantro
