Avocado Egg Spread

Avocado Egg Spread, great way to extend an avocado

Ingredients

1 ripe avocado
1 hardboiled egg
1 finely chopped scallion
1 finely chopped jalapeno deseeded
½ tsp garlic powder
1 tbs lemon juice
½ tbs dried cilantro
Salt & pepper to taste

Instructions

Remove the skin and stone from avocado and mash the flesh

Slice the hardboiled egg into tiny pieces and combine with mashed avocado

Add all remaining ingredients and mix well

Enjoy this avocado egg spread on whole grain bread or fat free flat bread
