Smoke Flavored Mashed Eggplant

Ingredients

1 medium size eggplant
1 small red onion
½ tsp cumin seeds
½ tsp black mustard seeds
1 tbs olive oil
Juice of one fresh lemon
1 chopped Roman tomato
1 chopped jalapeno
1 tbs of dried cilantro


Instructions

Char the whole eggplant over a naked flame on a stove-top burner
Peel off the blackened skin and chop the eggplant into small pieces and set a side
In a sauce-pan, sauté onions, cumin and black mustard seeds in oil
Place the eggplant in the pan with the onions and mash with a potato masher and cook for about ten minutes to remove any water, while ensuring that the eggplant is fully cooked through


Add remaining ingredients to the pan and season with salt to taste
