Minced Beef With Yellow Bell Peppers

Ingredients

3/4 lb of 93% lean minced beef
1 small red onion chopped
1 tsp crushed garlic
1 tsp finely chopped ginger
6 pepper corn
5 cloves
2 black cardamom pods crushed
2 star anise
1 dry cinnamon leaf
3/4 tbs olive oil
1 tsp ground coriander
1/2 tsp cayenne
1/2 tsp turmeric
Juice of half lemon
2 chopped Roman tomatoes
1 jalapeno finely chopped
1 small yellow bell pepper roughly chopped
1 tbs chopped fresh cilantro
1/4 tsp of garam masala
Season with salt to taste

Instructions

Place onion, garlic, ginger, black pepper corns, cloves, cardamoms, star anise and cinnamon leaf in a sauce pan with oil and saute for a few minutes until onions soften
Add to the pan, coriander, turmeric and cayenne together with a tablespoon of water and mix well and cook for a few minutes
Place the mince beef in the pan with tomatoes, jalapeno and lemon juice and salt and cook on medium low heat with the lid on the pan for about ten minutes
Add the bell peppers to the pan and cover with lid and cook for another five minutes
Garnish with cilantro and garam masala

Serve with brown rice or whole grain pita bread. Should yield 4 servings.
