Creamy Pigeon Peas
Recipe
7 oz can pigeon peas drained
2 oz can sardines packed in mustard
1/2 avocado roughly chopped
1 tbs sweet mustard
1 tbs fat free mayonnaise
Juice of 1/2 lemon
1 plump tomato roughly chopped
1 jalapeƱo deseeded and finely chopped
1 tsp of dried mint
Instructions
Place all ingredients in a nonstick pan and mix well gently.
Warm the contents through on medium low heat.
Season to taste with salt and pepper.
Recipe is perfect as an appetizer for two people, served with warm brown bread.
