Clam Penne Pasta

Ingredients for sauce

6.5 oz can of chopped clams in clam juice
1 medium size red onion diced
3 cloves of garlic finely chopped
1 tbs EVOO
Juice of one fresh lemon
1/4 red chilly flakes
1 tsp dried basil
Salt & pepper to taste
1 tbs low fat grated Parmesan cheese

Instructions

Sauté onion & garlic in oil in a pan
Add chopped clams and clam juice
Add chilly flakes to the pan and squeeze lemon juice
Cook for two or three minute
Season with salt & pepper
Sprinkle dried basil on the sauce

Toss the clam sauce into 6 oz of freshly prepared Penne pasta. Sprinkle Parmesan cheese on top of the pasta dish, which should serve two people.
