Snow Balls
Ingredients

2 eggs whites 
3 1/4 cups skimmed milk 
4 tbs of SPLENDA (cup for cup measure for sugar)
2 tsp of desiccated coconut
2 tsp of slithered pistachio 
2 1/2 tbs of dry custard powder


Instructions 

Snow Balls 
Remove 2tbs of milk and set aside for custard. Boil the remaining quantity of milk in a large pan and then reduce heat to simmer 
Whip the egg whites until stiff
Using a tbs scoop the whipped egg whites, making round balls, and place into simmering milk. Place 4 balls at a time in the milk pan. 
After 30 sec flip the egg white balls and cook for another 30 sec and then remove from pan, draining excess milk, and place cooked balls in a serving dish. Repeat until all egg whites are turned into cooked balls. Don't be alarmed, the cooked balls will collapse a little. 

Custard
Add SPLENDA to the simmering milk and mix thoroughly
Dissolve custard powder in 2 tbs of cold skimmed milk
Add 3tbs of warm sweetened milk to the custard mixture to raise the temperature and then combine this with the remaining warm sweetened milk . Mix thoroughly to avoid any clumping.
  

Assembly
Pour warm custard over the cooked egg white balls, which should rise 
Sprinkle coconut and pistachios over the dish
Refrigerate for at least 3 hours and serve cold.
