Tofu Spaghetti & Tuna
Ingredients
1 packet (8 oz) Tofu spaghetti
3 tbs of store bought tomato sauce
1 can (5 oz) tuna packed in water
1 small red onion thinly sliced
2 cloves of garlic finely chopped
1 tbs lemon juice
1/4 tsp red chilly flakes
1 tsp dried parsley
2 tsp low fat Parmesan cheese
Instructions
Empty the entire contents of tofu spaghetti into a pan and add a pinch of salt and a quarter cup of water and boil for 4 minutes
Drain the spaghetti and set aside
Sauté onion and garlic in tomato sauce and lemon juice in a nonstick pan. Cook for about three minutes and then add the tuna fish, chilly flakes and salt to taste.
Combine tuna sauce with the tofu spaghetti and garnish with parsley and sprinkle low fat Parmesan cheese
