Minced Meat & Green Peas
Ingredients
1/2 lb lean mined beaf
1 medium size red onion roughly sliced
1 tbs grated fresh ginger
1 tbs crushed garlic
1 tbs olive oil
1 cup diced canned tomato
1 cup frozen green peas
2 tbs water
1 jalapeño
1 tsp curry powder
1/2 tsp cayenne
2 tbs chopped fresh cilantro
1/2 tsp ground black peppers
Salt to taste
Instructions
Sauté onion, garlic and Ginger in oil in a pan
Add canned tomatoes, curry powder, cayenne to the pan and mix well with the onion mixture and cook for a couple of minutes
Add minced beef and water to the pan and cover with a lid and cook on medium low heat for about twenty minutes
Add green peas and jalapeño to the pan and cover with a lid and continue to cook on very low heat for just a few minutes until the peas are done
Season with salt to taste and sprinkle ground pepper on top
Garnish with cilantro
Great dish to serve alongside steamed brown rice. The recipe should yield 3 to 4 servings.
