Red Cabbage

Red Cabbage

Ingredients

1 small red cabbage finely shredded
1 medium size yellow onion thinly sliced
½ tsp of yellow mustard seeds
1 tsp of crushed garlic
1 tsp of finely chopped ginger
½ tsp red chilly flakes
1 tbs olive oil
1 red bell pepper diced
1 jalapeno deseeded and finely sliced
1 tbs Dijon mustard
2 tbs lime juice
2 tbs sweet and sour sauce
2 tbs fresh cilantro
Salt and ground black pepper to taste

Instructions

Saute onion, garlic, ginger, mustard seeds and red chilly flakes in oil in a large pan
Add shredded cabbage to the pan together with red bell peppers, jalapeno, Dijon mustard, lemon juice and sweet and sour sauce
Cover the pan with a lid and cook on medium heat for about 20 minutes
Season with salt and ground black pepper to taste and garnish with fresh cilantro
