Sweet & Sour Liver With Green Peas & Pearl Onions
Ingredients
6 oz Goat's liver cut into half inch cubes
7 oz canned mix of green peas & pearl onions
3/4 tbs olive oil
1 small red onion diced
1 tsp minced garlic
1 tsp minced Ginger
1/4 tsp fenugreek
2 tbs sweet & sour sauce
1 tbs lemon juice
1/2 tsp red chilly flake (adjust to taste)
1 tbs dried mint
Salt & black pepper to taste
Instructions
Saute onions, fenugreek, garlic and ginger in oil in a wok
Add the liver to the wok with sweet and sour sauce, lemon juice and chilly flakes and cook on medium heat for about 3 to 4 minutes
Add green peas & pearl onions to the wok and continue cooking for a couple of minutes
Garnish with dried mint and season to taste with salt and pepper
Serve this wonderful dish with couscous or plain brown rice.
