Omelette With Green Peas & Pesto Sauce

Ingredients

2 large eggs
7 oz green peas (frozen or canned)
1 scallion thinly chopped
1 jalapeño deseeded and finely chopped
1 tbs store bought pesto sauce
1 tbs roughly chopped fresh basil
Salt and pepper to taste

Instructions

Coat a microwaveable bowl with cooking spray
Crack two eggs into the bowl
Add all other ingredients to the bowl and whisk well
Microwave on high heat about 3 to 4 minutes until the egg mixture is set


Drizzle some hot sauce on the omellete if you like and serve with a potato salad or a piece of whole grain toast
