Butternut Squash Soup

Ingredients

2 lb butternut squash peeled & cut into large cubes
2 tbs fat free sour cream
Juice of one lemon
1/2 tsp red chilly flakes
2 tbs chopped fresh cilantro
Salt & ground black pepper to taste


Instructions

Boil butternut squash in a large pot and then simmer for about 20 mins until tender
Drain excess water from
the pot, retaining about 1 1/2 cup worth
Add sour cream, lemon juice & chilly flakes to the pot
Using a hand held blender, blend the butternut squash into a smooth soup. Adjust desired consistency with boiling hot water
Season the soup with salt & pepper to taste
Garnish with fresh cilantro

Serve the soup hot with brown crusty bread. The recipe should yield four generous servings.
