Lemon and Pepper Catfish

Ingredients

1 lb catfish cut into 1 inch pieces
1 ½ tbs of dried lemon pepper seasoning
Juice of one small lemon
Salt and black pepper to taste
1 tsp dried parsley

Instructions

Rub the dried lemon pepper seasoning into catfish and marinate for a couple of hours in the fridge
Heat a non-stick skillet but don't add any oil. The fish is quite oily and will release it's own oil to cook in.
Place the catfish in the skillet and squirt fresh lemon juice
Cook for about 5 or 6 minutes, stirring occasionally
Season with salt and pepper
Garnish with dried parsley
