Split Mung Beans w/Dill and Lemon
Ingredients
1/2 cup of split and dehusked mung beans
2 cups of water
2/3 tsp garlic powder
1 tsp finely chopped fresh ginger
1 finely chopped jalapeño
1 tsp dry dill
Juice of half lemon
1/2 tsp of ground cumin powder
1 tbs dehydrated white onion
1 tsp olive oil
Instructions
Start by rinsing mung beans thoroughly and place in a pan with water and boil until cooked
Add all ingredients to the cooked beans barring oil and onions
In a small frying pan, sauté onions in oil
Add all remaining ingredients to the cooked beans including sauted onions
Season with salt to taste
Should yield two servings. Enjoy the dish hot either as a soup or over brown rice. Great source of protein, fiber and good complex carbohydrates.
