Alaskan Pink Salmon With Plantain - a quick and healthy appetizer

Ingredients

1 yellow plantain
2/3 cup canned Alaskan Pink Salmon
1 small red onion thinly sliced
2 tbs of mango coconut sauce
1/4 tsp cayenne pepper
1 tsp lemon juice
1 tsp dry mint

Instructions

Make a long slit with a knife in the plantain skin and microwave for about 3 minutes on high
Remove skin from plantain & slice into round circles about 1/4 inch thick
Soften the onions in a pan with mango coconut sauce
Add all remaining ingredients to the pan including the plantain slices
Mix and warm all contents through
Season with salt and ground black pepper

Serve this dish an appetizer. It should yeild two servings
