Multi-Colored Summer Side Dish - Beet Root, Spinach and Sweet Corn

Ingredients

1 15 oz can of spinach
1 15 oz can of beet root
1 7 oz can of sweet corn
1 small onion finely chopped
1/2 teaspoon cumin seeds
2 garlic cloves finely minced
1 tbs olive oil
Juice of 1 lemon
1/4 tsp of red chilly flakes
1 tbs of fresh coriander leaves
Season with salt to taste

Instructions

Drain the tree canned items and remove as much water as possible and set aside.
In a non-stick pan, saute onions, garlic and cumin seeds in olive oil
Place the canned items into the pan and add remaining ingredients and cook for no more than five minutes.
Garnish with fresh coriander.

Recipe should yield three generous servings.  Enjoy the summer side dish either hot or at room temperature. Serve this with grilled chicken or fish.
