Tikka Masala Flavored Tofu
Ingredients
14 oz firm tofu sliced into small cubes
1/2 cup of shop bought tikka masala
1 medium size onion sliced thinly
1/2 tsp of cumin seeds
2 cloves of garlic finely minced
1 tbs of olive oil
1 small lemon - use zest and juice
1 plum tomato roughly chopped
1 jalapeño deseeded and finely sliced
1 large green bell pepper roughly chopped
1 large red bell pepper roughly chopped
Salt to taste
1 tbs fresh coriander leaves for garnish
1 tbs fresh coriander leaves for garnish
1/2 tsp of garam masala
Instructions
Marinate tofu in tikka masala for at least two hours in the refrigerator
Saute onions, cumin seeds and garlic in olive oil in a large pan
Add remaining ingredients to the pan with the exception of garam masala and coriander
Cook for about seven to ten minutes until the tofu is cooked through
Sprinkle garam masala on top and garnish with fresh coriander leaves for flavor and color
Recipe should yield four servings. Enjoy this dish for lunch or dinner with plain brown rice or brown pita bread.
