Tomato and Herb Frittata
Tomato and Herb Frittata -open omelet puffed and browned in the oven
Recipe
Cooking spray to coat skillet
1/4 cup of chopped plum tomatoes
1/2 cup chopped scallions (spring onions)
3 whole fresh basil leaves roughly chopped
1 tbs butter flavored-vegetable oil spread
1 cup store bought egg whites
Instructions
Preheat the broiler.
Coat an over-safe 10" skillet with cooking spray and place over medium heat until hot. Add the tomatoes, scallions, and basil, and vegetable oil spread and cook for about five minutes until vegetables are tender.
Reduce the heat to low and pour the egg whites evenly into the skillet over the vegetable mixture. Cover and cook for 5 to 7 minutes, or until the frittata is cooked on the bottom and almost set on the top.
Transfer the skillet to the broiler and broil for about two minutes until the top is set.
Slide the frittata onto a serve platter and cut into wedges to serve with a salad or whole wheat brown toast.
