Scrambled Eggs w/Tuna & Avocado
Ingredients
2 whole beaten eggs
1/2 avocado slices into small cubes
1 5 oz can of drained tuna packed in water
1 jalapeño deseeded and thinly sliced
1 scallion roughly chopped
1 teaspoon of dried mint
Salt and ground pepper to taste
Instructions
Place all ingredients in a large bowl and mix thoroughly
Lightly coat a small nonstick pan with 1 teaspoon of olive oil
Pour the egg mixture into the pan and start stirring over medium heat
Cook for a few minutes until the egg sets
Serve scrambled egg with sweet & sour sauce and grilled whole wheat pita bread. Recipe yields one generous serving. Perfect for weekend brunch or a filling lunch any day of the week.
