Curried King Oyster Mushrooms
Curried King Oyster Mushrooms
Ingredients
1 lb King Oyster mushrooms
1 medium size red onions finely sliced
2 cloves of garlic finely minced
1 tbs olive oil
2 tbs of store bought low fat Tikka sauce
1 plump tomato roughly chopped
1 jalapeño de-seeded and chopped
Juice of one lemon
1 tsp of dried cilantro
Salt to taste
Instructions
Clean the mushrooms with a damp cloth and chop roughly and set aside
Sauté onions and garlic in olive oil in a non stick pan.
Stir the tikka sauce in to the pan and cook for a couple of minutes
Add rest of the ingredients to the pan except for cilantro and cover with a lid
Cook on low heat for about fifteen minutes
Garnish with dried cilantro
This is a good alternative to meat. Serve it as a main course with steamed brown rice.
