1 cup string beans
1 yellow ripe plantain
1 5 oz can Tuna packed in water
1 small red onion diced
2 tbs fat free ranch dressing
1/2 lemon zest and juice
1 Plum tomato roughly chopped
1 tsp dried mint
Wash & cut string bean into one inch pieces
Steam the string beans & set aside
Soften the onions in ranch dressing and lemon juice in a pan over low heat
Peel the plantain and slice into quarter inch circles and add to the pan.
Add lemon zest, tomatoes, & jalapeño to the pan and cover with a lid
Drain the can of tuna and add to the pan.
Mix well and season with salt to taste and garnish with dried mint.
A fat free one pot dish perfect for either lunch or dinner. Recipe should yield a generous serving for one.
