Recipe for Tropical Tuna with Mangoes

Tuna with Mangoes - speedy transformation of canned tuna into a tropical delight

Ingredients

Half medium size onion sliced thinly
1 teaspoon of olive oil
1/2 red bell pepper diced
1/2 green bell pepper diced
2 6oz cans of tuna packed in water
1 medium size mango diced into 3/4 inch cubes
2 medium size tomatoes diced
1/2 teaspoon of cayenne pepper
1 jalapeno pepper de-seeded and membrane removed
salt and pepper to taste
1 teaspoon of dry cilantro for garnish

Instructions

Saute onion with the red and green bell peppers in oil
Add the tuna and rest of the ingredients to the pan
Mix well and warm the mixture through for 3 minutes
Season with salt and pepper to taste
Garnish with cilantro

Should yield two generous portions. Serve with brown rice.
