Tuna & Avocado
Tuna & Avocado
Ingredients
2 cans 5 oz tuna packed in water
1 ripe avocado
1 plum tomato roughly chopped
2 tbs fat free zesty Italian salad dressing store bought
1 tsp wasabi sauce store bought
Juice of half a lemon
1 tsp dried basil
Salt and ground black pepper to taste
Instructions
Drain cans of tuna and place in a bowl
Slice avocado into large chunks and to the tuna
Combine rest of the ingredients and mix gently
Season with salt and pepper and garnish with dried basil
Recipe will yield two or three servings. Enjoy hot or cold alongside a healthy potato salad

Tuna Rice & Peas
Tuna Rice & Peas
Ingredients
3 cups boiled plain white rice
2 5 oz tuna cans packed in water
1 15 oz can green peas
3 tbs fat free Ranch dressing
1 large plum tomato roughly chopped
2 scallions finely sliced
Juice of half a lemon
1 tbs fresh chopped parsley
Salt to taste
Instructions
Drain cans of tuna and peas and place in a bowl
Add all other ingredients to the bowl and mix thoroughly
Season with salt to taste & garnish with parsley
Recipe should yield two generous servings. Serve this fat free one pot dish warm with a nice hot salsa on the side.
