Tofu Spaghetti & Tuna

Tofu Spaghetti & Tuna

Ingredients

1 packet (8 oz) Tofu spaghetti
3 tbs of store bought tomato sauce
1 can (5 oz) tuna packed in water
1 small red onion thinly sliced
2 cloves of garlic finely chopped
1 tbs lemon juice
1/4 tsp red chilly flakes
1 tsp dried parsley
2 tsp low fat Parmesan cheese

Instructions

Empty the entire contents of tofu spaghetti into a pan and add a pinch of salt and a quarter cup of water and boil for 4 minutes
Drain the spaghetti and set aside
Sauté onion and garlic in tomato sauce and lemon juice in a nonstick pan. Cook for about three minutes and then add the tuna fish, chilly flakes and salt to taste.
Combine tuna sauce with the tofu spaghetti and garnish with parsley and sprinkle low fat Parmesan cheese

Potato & Apple Salad

Ingredients for Salad

2 large potatoes peeled and chopped into cubes
1 Granny Smith apple chopped into half inch cubes
1/2 medium size red onion finely sliced
1 jalapeño finely sliced (deseed if you prefer)
1/4 cup golden raisins
1 tsp dried dill


Ingredients for Dressing

3 tbs fat free mayonnaise
2 tbs lemon juice
1/2 tsp cinnamon
1/4 tsp powdered garlic
Pinch of salt and ground black pepper

Instructions

Boil the potatoes until tender and then place in a large salad bowl
Combine all other salad ingredients into the bowl except dried dill and set aside
In a small bowl prepare the dressing and then add this to the salad and mix everything well but gently.
Sprinkle dried dill over the salad and enjoy this at room temperature

The holiday season, filled with open houses, family gatherings, shopping excursions, and an abundance of food and drink, tends to disrupt routine activities, including healthy eating and particularly healthy snacking.

The trick during the holidays is to not only eat healthy meals based on lean protein, nutrient-dense fruits and vegetables, fiber-rich whole grains, and low-fat dairy — but also to make sure you work in your mid-morning and mid-afternoon snacks, which will help you keep your cravings under control.

Clam Penne Pasta


Clam Penne Pasta

Ingredients for sauce

6.5 oz can of chopped clams in clam juice
1 medium size red onion diced
3 cloves of garlic finely chopped
1 tbs EVOO
Juice of one fresh lemon
1/4 red chilly flakes
1 tsp dried basil
Salt & pepper to taste
1 tbs low fat grated Parmesan cheese

Instructions

Sauté onion & garlic in oil in a pan
Add chopped clams and clam juice
Add chilly flakes to the pan and squeeze lemon juice
Cook for two or three minute
Season with salt & pepper
Sprinkle dried basil on the sauce

Toss the clam sauce into 6 oz of freshly prepared Penne pasta. Sprinkle Parmesan cheese on top of the pasta dish, which should serve two people.

Ingredients

1 ripe persimmon
1 tbs balsamic vinegar
1 Tsp honey
Pinch of dried mint

Instructions

Wash and dry persimmon and slice into half moons and place in a small bowl
Add balsamic vinegar and honey to the bowl
Leave to marinate in the fridge for about 30 mins to 1 Hour
Arrange the persimmon slices on a nice dessert plate and sprinkle a pinch of dried mint before serving

Perfect as an after dinner healthy sweet treat for one person

With the holiday season now in full swing, chances are you are probably spending a lot more time at the shopping mall. Even as you brave the crowds — and try to ignore the tempting aromas from the food court — keep in mind there are many ways you can turn your shopping experience into a healthy outing. Try these tips the next time you are mall bound.

1. Plan ahead. Have a low fat healthy meal before you hit the mall so you are not tempted to indulge in the unhealthy choices at the food court. Also, pack easy, portable snacks (such as nuts or some reduced-fat string cheese, or a few dried apricots, a piece of fresh fruit to munch on mid-morning or mid-afternoon.

2. Shop early. Hit the mall early in the morning. Not only will it be less crowded, but you’ll also avoid the tempting smells of lunch at the food court.

3. Work in extra walking. You may have heard me say this before, but I will happily remind you again: Parking in a spot that’s farthest from the mall entrance is a great way to log in extra steps. (Just make sure it’s well lit if you’ll be heading home when it’s dark.) And whenever you can, skip the escalator and elevator in favor of the stairs.

4. Do intervals while you shop. Before you begin shopping or while you’re going from store to store, squeeze in a few intervals of really fast walking. In addition to getting your heart pumping, this will clear your head before diving into the in-store fray.

5. Boost your self-esteem. Most likely your focus is on finding gifts for friends and family, but if you pass a great outfit, I strongly suggest that you try it on in a new smaller size to see just how far you have come along on your weight-loss journey! This will not only boost your self-esteem but also reinforce your commitment to fitness and weight loss as you face the challenges of the holidays.
